Tofu Buttermilk

What you need: 

Tofu- any kind may be used. If you are using the water-packed kind, use half of that. If you are using the Aseptic (boxed) kind, use approx.
3/4 of that block
4 tablespoon lemon juice
1 cup water or plain soy milk

What you do: 

This is so easy. Just blend all the ingredients in an electric blender or food processor until well blended. This is a great substitute for Buttermilk. Enjoy!
