Three Bean Beer Chili
1 can each: black beans
sweet corn kernels
1 large can whole tomatoes
1 medium white or yellow onion, chopped
1 green bell pepper, in strips
2 jalapenos or habaneras, diced
1 tablespoon cumin, or more if you like
1 1/2 tablespoons ancho chili powder
1 tablespoon cayenne pepper
salt to taste
1 to 2 bottles beer of your choice
1 to 2 cups water
Combine beans, corn, tomatoes, jalapenos (or habaneras) and water in a large stock pot. Bring to a boil. Add seasonings and make it a little spicier than you want the final product to be.
Simmer for an hour or so. Add bell pepper and onion and beer. Cook until you want to eat it.
Note: I tend to use hoppier beers in this recipe, and I go with roughly a bottle and a half, 18oz. I've also mixed two different beers in this, Stoudt's American Pale Ale, and Sierra Nevada Stout, which was good, but I'd hesitate to use only stout. Any decent India Pale Ale also works really well in this and brings out the spices and the hot peppers.
