Sweet and Spicy Chili

What you need: 

1/4-1/3 medium onion, diced
2 large cloves garlic, diced
4 ounces jarred hot banana pepper rings, diced
1 (15 ounce) can kidney beans
1/2 (15 ounce) can stewed tomatoes, optional
1/4 cup white vinegar
1-2 tablespoons vegan sweetener
1 heaping teaspoon chili powder
1/4 teaspoon cayenne
red pepper seeds/flakes, to taste
salt and pepper, to taste

What you do: 

1. Add onion, garlic, and banana peppers into pot.
2. Add kidney beans, tomatoes (if using) and all other ingredients. Mix it all.
3. Bring to a bubbling boil over medium heat, then turn heat down and let simmer about 45 minutes, stirring occasionally.
You will be surprised how good this rather simple vegan chili is! Meat-eating chili lovers will love this! This makes a unique and delicious chili, that is sweet yet good and spicy, and has a complex taste! It is not soupy, but rather, pasty. Very easy to make. Enjoy!

SO HOW'D IT GO?

This was a hit at my house. I have tried several chili recipes and this was the first that had my kids raving about the deliciousness factor.

Having said that, I will make a couple of changes next time...I found it to be a little too sweet... I put in the full amount of sweetener and I think it was just too much. Also, I will only use a small splash of vinegar next time, not the entire 1/4 cup. Overall, I like this recipe. I will definitely make it again since it is so simple and easy to add or subtract ingredients as needed.

Great! I used a jalapeno pepper, and it was just SOoooo tasty!

yummy - i used this with white beans in tomato sauce and i also added a package of Quorn (the stuff that looks like ground beef) and i served it in bread bowls - very tasty - i would make again :-)

AHHh!! The perfect chili!! The taste was awesome. So many chilis I've tried have been bitter or bland, but not this one!! It did come a little soupy for me (I like a very dry, pasty chili) so I'll have to play with that a bit...but this is THE chili!

I enjoyed this recipe. The chili was very tasty and easy to prepare - although too tangy to my tastes. I would go easy on the vinegar and/or banana peppers next time I make it - but I will make again.  :)
