Super-Easy Lemon Cake

What you need: 

2 1/2 cups flour (315 g)
3 teaspoon baking powder (7.5 g)
1 1/3 cups sugar (175 g)
1 1/2 teaspoon vanilla (7.5 ml)
7 tablespoon oil (150ml)
1 1/2 cups water (340 ml)
2 tablespoons lemon juice (30 ml)

What you do: 

This recipe comes from my mom.
Preheat oven to 325F (160C).
Sift flour and baking powder into a bowl.
Add sugar, vanilla, oil, water and lemon juice. Mix well.
Grease either a 9x9 inch square pan or two round 8 inch pans. (Also, you can double the recipe and make a nice sheet cake.) Pour in the batter.
Bake for about 45-55 minutes. It's done when a fork (or toothpick) inserted in the center comes out clean. Let it cool before trying to take it out of the pan.
I really enjoy this cake topped with strawberries or a simple icing sugar/water glaze.

SO HOW'D IT GO?

I just made this cake and it came out delicious. I substituted the water with Soy milk, and I also grated and added the juice of two lemons. Its very lemony, very easy to make and most important has a yummy taste.

Oh, and I also topped it off with a toffu whiped dream, which consists of firm tofu, vanilla extract, and maple sirup. Throw it all together in a blender and you'll have a great fluffy topping.....

I wouldn't make this again... it wasn't bad, but it wasn't great either.  Made it for a birthday party and everyone agreed that the only part that was really enjoyable was the part that was soaked with icing. The cake itself wasn't very sweet, nor was it very lemony.  The frosting saved it, and there are definitely better whipped frostings... this is just a glaze.

Hi,

I think there is to much liquid in the recipe. It was like pancake batter. I added additional 130 g flour. Next time I will try and use only 250 ml water, this should be enough for 315 g flour.
