Strawbanna oatmeal muffins
2 cups flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1 1/4 teaspoons salt
1/4 cup brown sugar
3/4 cup oatmeal
1 1/2 cups nondairy milk (I use soy)
1/2 cup canola or vegetable oil
8-10 medium sized strawberries (frozen and thawed or fresh)
1 banana, mashed
1. Preheat the oven to 400 degrees F. Put all of your dry ingredients (baking powder, flour, salt, sugars, oatmeal) into a mixing bowl and combine.
2. Add your wet ingredients (milk, oil) and mix until the mixture becomes a dough. Add in your fruits. Mix everything well.
3. Spoon the mixture into a greased or lined muffin pan so each cup is about half full. Bake for 30-32 minutes, remove and enjoy.
