Spaghetti with Veggies and Tofu Sauce
1 cup whole wheat spaghetti (or other pasta)
1/5 package of silken tofu
1 tablespoon olive oil
1/2 cup tomato sauce (from jar)
broccoli, mushrooms, peppers
Boil the spaghetti for approx. 20-30 minutes on medium heat, or until cooked.
While the pasta cooks, put 1 tablespoon of olive oil in a medium saucepan on low heat. Stir in the veggies until hot, but not brown.
In a separate pot, put the tomato sauce and silken tofu on medium heat, and stir for 5 minutes, or until tofu and sauce are blended together.
Add pasta and veggies together. Pour sauce on top.
