Spacemonkey Mac and Cheese

What you need: 

4 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon pepper
4 cups unsweetened soy milk
4 tablespoons vegan margarine
2 packages Vegan Gourmet cheddar cheese, cut into small cubes
16 ounces macaroni noodles

What you do: 

Boil macaroni till done.
In saucepan combine flour, salt, dry mustard and pepper; stir in milk.
Add vegan margarine.
Stirring constantly, bring to a boil over medium-high heat and boil 1 minute.
Reduce heat and stir in cheese until melted.
Add macaroni.
Pour into 9 x 11 casserole dish.
Bake at 375 for half and hour.
Let cool 10 minutes.

has anyone tried this with daiya cheese? I can't stand the FYH.

I thought that this was okay, but not great.  However I am used to eating real cheese and so far I have not found any thing vegan that is as good as the real thing, but I am wanting to get away from eating real cheese because there is so much saturated fat and cholesterol.

It tasted just like the vegan Gourmet cheese.  I followed the recipe almost exacty, and I have to say, it looks exactly like real mac n cheese, but has a flavor that is just a bit off due to the vegan gourmet.

But it was good.  However, I didn't bake it.  I made the sauce exactly as the recipe described but halved it, but used the same amount of noodles and found that there was plenty of sauce for that amount of noodles.  I couldn't imagine how much sauce there would have been if I had used the whole recipe. 

I  definately want to make this again but I have a few ideas to tweek it.  I will double the part of the recipe with the flour and such but use less of the vegan gourmet since that has an off flavor, and instead of using mustard powder I think I will try it with dijon mustard instead. 

But with the leftovers I think I may add some garlic powder and broccoli and bake it and call it a broccoli casserole.

Mine is baking in the oven as I type! (with panko breadcrumbs on top!) I added three tablespoons of nutritional yeast because the only vegan milk I had was very vanilla soy milk and it made the creamy fake cheesy deliciousness a little too sweet for me. Anyways, as soon as it's done I'll type the final verdict!

30 minutes later : This is absolutely delicious!!!!!!!

made this last night and it was very tasty!

I didn't have that much soy cheese on hand but used a bit of vegan gourmet mozzarella and a bunch of nutritional yeast instead.
added some peas and veggie bacon bits on the top and it turned out creamy and delicious!
might try it with breadcrumbs/panko on top next time!

Turned out fantastic!!  Absolutely delicious.  We even put a little extra cheese on top.  Thank you for the brilliant Vegan recipe.  My non vegan boyfriend and I both loved it and will definitely be making this again in the future.

It would be difficult to write a list of skills a cook should possess to become Top Chef.  Someone that can cook and make faux cheese look and taste better than the real stuff has true talent. 

Kudos to leafygreen for making a delicious, cruelty-free alternative that even my carnivorous parents love.
