Soy Nuggets

What you need: 

1 lb of firm tofu, frozen and thawed
soy sauce
soya milk
nutritional yeast
vegan mayonnaise
dairy-free cheese sauce powder (optional)
plain flour
olive oil
chilli sauce (Optional)

What you do: 

Preheat oven to 180 degrees.
Drain the tofu.
Cut the tofu into 1 inch x half inch cubes.
Lightly grease a baking tray.
Using a saucer, line the bottom with soy sauce. Then add 2 spoons of soya milk, a large spoon of the mayo and mix together. Add a teaspoon of olive oil.
Optionally, add a spoon of chilli sauce here for hot nuggets.
Then add 3 large spoons of nutritional yeast. If you have it, add a spoon of the vegan cheese sauce powder. Stir together.
The mixture should still be quite liquidy, so add enough flour to form a brown paste. If its too dry, add some more soy sauce or soy milk.
Roll the cubes in the mixture and leave for at least 10 minutes.
Bake in the oven for 10-15 minutes until brown & slightly crispy on the outside.
Serve with BBQ sauce and fries or use in a stirfry.
