5 cloves garlic, minced or pressed
1 red pepper, diced
1 green pepper, diced
1 teaspoon chili powder

3 tomatoes, diced
2 cups cooked black beans (I used a 15 ounce can)
chopped cilantro, to garnish
salsa, to serve

What you do:

1. Preheat oven to 375 degrees F. Saute potatoes and onions in water until onions have softened.
2. Add garlic and peppers, and continue cooking until onions are translucent and peppers have softened. (more water may be needed) Sprinkle with spices.
3. Add tomatoes and black beans. Bake until nicely browned and not too saucy. Sprinkle with cilantro, and serve with salsa.'
