Slow Cooked Sweet And Sour Lentils

What you need: 

2 1/4 pounds brown lentils
1 cup crushed pineapple, in juice
1 tablespoon brown sugar
1 tablespoon tomato sauce or ketchup
1 tablespoon soy sauce
2 red peppers, diced roughly
2 green peppers, diced roughly
2 medium brown onions, diced roughly
2 medium carrots, diced roughly
1 tablespoon black pepper, lightly cracked
3 cloves garlic, minced
1 small bunch parsley, chopped roughly, to garnish

What you do: 

1. Add all ingredients except parsley to slow cooker, combining well.
2. Cover and cook on the lowest setting for 6 hours, stirring occasionally to prevent sticking. If it seems dry, add 1/3 cup water.
3. Once cooked, garnish with parsley and serve with steamed rice.

I already have 2 lentil soup recipes that I like, one of which includes potatoes, spinach, and a bit of allspice, the other of which uses leeks and sausages. I'm wondering what other flavor combinations I might try. Will you tell me what you like to use?

This was pretty tasty, but called for way too much lentils!!  I'll be freezing a lot of it for another time!  Also, I added a lot of water, as the reciped didn't really call for that much liquid for the lentils to cook, so I'm not sure I understood that part.
