Simple Whole Beet Soup

What you need: 

3 tablespoons oil
3 cloves garlic, chopped
1 medium onion, chopped
beet tops, chopped finely, optional
3 cups raw beets, peeled and diced
4 cups vegan beef broth or vegetable broth
chives or green onions, finely chopped, to garnish

What you do: 

1. Heat oil in soup pot and saute garlic, onions and beet tops until onions start to brown.
2. Add remaining ingredients, bring to a boil and simmer, covered, until beets are tender.
3. Blitz in food processor or blender until smooth. Serve topped with chives or green onions, if desired.
This soup is good hot or cold.
Source of recipe: I made up this recipe on a rainy day when I bought some fresh beets with the tops on.

SO HOW'D IT GO?

Loved it! I used 4+ cups of beets and I added about 1 Tb of thyme. After it was done (about 35 minutes later) I transfered everything in the blender... Delicious!!

This was crazy-delicious!! I do not normally like beets, but this was so sweet, rich and full -- very much like a butternut squash soup. LOVED it. So nutritious, too, and a great way to eat that "rainbow" diet. I will make again and include a photo next time. It was gorgeous.

I LOVE that you incorporated the beet tops as well. So much nutrition and flavor as well as less waste so it is a very economical dish. I'd love to try this!

PS: I have also made this adding a cup or so of fresh raw spinach to the beets. It gives a bit of depth to the flavour.
