Simple Mexican Meal
1 can vegetarian refried beans
3 tablespoon frozen corn kernels
1 bag of burger-style crumbles
1/4 cup + 2 tablespoon salsa choose a good brand. This is what really makes or breaks the flavor
taco salad shells, heated
1 green onion, sliced
Heat beans and corn kernels over medium temperature for a few minutes. Put crumbles in microwave for 1 1/2 minutes. Let sit for another minute. Add crumbles and salsa to beans. Stir.
After it bubbles, turn to low heat. Cook for another one or two minutes. Turn off stove and scoop bean mixture into taco shells. Top with green onion.
Other good topping ideas are: Shredded lettuce, vegan cheese, vegan sour cream, sliced black olives, etc.
