Kats Unbelievable Chili

What you need: 

1 large can kidney beans
2/3 cup soy lecithin
3 cups crushed tomatoes
2 bay leaves
3 tablespoons oil
2 cups chopped onion
6 cloves minced garlic
1 cup chopped capsicum
1 cup chopped carrots
2 teaspoons dried chillies
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 teaspoon basil
1 1/2 teaspoons oregano
1 teaspoon cumin,

What you do: 

Simmer beans, soy lecithin, tomatoes and bay leaves for 30 minutes, covered. Heat oil in a frypan and saute onions, garlic, capsicum, carrots, chillies, basil, oregano & cumin until onions brown. Add to beans, adding water if neccesary. Add salt and cayenne pepper. Simmer, stirring occasionally for 20 minutes uncovered.
This chili is perfect with brown rice, and can be frozen for instant meals.
