Sesame-Avocado Pasta Salad

What you need: 

1/2 pound vermicelli or angel hair pasta
1 ripe avocado, diced in 1" pieces
2 tablespoons sesame oil
1/4 cup lemon and/or lime juice
1 tablespoon sesame seeds
1/4 teaspoon red pepper flakes, or to taste
pinch salt
2 cloves garlic, crushed

What you do: 

1. Cook pasta according to package directions, drain, and rinse in cold water to chill.
2. Mix other ingredients in a small cup and pour over avocado.
3. Add cold, drained pasta and mix thoroughly.

SO HOW'D IT GO?

WOW. agreed with all the positive reviews! This only took me as long to boil the pasta that I had. I just played along with the ingredients of the dressing by eye, and it came out amazing!!!!!!! I bet this would be really good with soba noodles. yummm.

i love this recipe and make it as often as possible, with a variation in between the original and baypuppy's. i use 1 tbsp of sesame oil, 2 overspilled tbsp of lemon juice, 1 tbsp of soy sauce, and a couple splashes of chili garlic sauce. i also never use salt, as the lemon juice makes it tart enough. thanks for the recipe!
