Refreshing Summer Pasta Salad

What you need: 

2 cups dry whole wheat pasta (I use rotini)
1/2 cup marinated artichokes hearts
1/2 cup hearts of palm, diced
1/2 cup black olives, diced
1/2 cup cherry tomatoes, halved or whole
2 tablespoons extra virgin olive oil
1 teaspoon dill
salt, to taste

What you do: 

1. Cook pasta according to package directions. Drain, rinse with cold water to cool, then drain again.
2. In a bowl combine artichokes hearts, hearts of palm, olives, and tomatoes; toss to combine.
3. Add olive oil and dill; toss to coat.
4. Add pasta; lightly toss to coat. Season with salt. Yummy!
