Red Kidney Bean Potato Patties

What you need: 

2 cups cooked red kidney beans, drained
1 teaspoon epazote leaves, crushed
1 onion, chopped
1 1/2 teaspoons salt
1 cup russet potatoes, grated
1 teaspoon pepper
2/3 cup cracker crumbs
1 tablespoon oil, for cooking

What you do: 

1. If using canned beans, put in the microwave with some water for a couple of minutes to soften the beans so they're easier to mash, otherwise cook the beans so they're a bit on the mushy side.
2. Combine the beans, epazote, onion, and salt in a food processor or blender and blend to form a smooth spread. Add the grated potatoes, pepper, and cracker crumbs and mix by hand.
3. Make the mixture into the size patties you want. Heat a large skillet over medium with oil and cook until golden brown on each side, about 5 minutes each side.

SO HOW'D IT GO?

I couldn't find epazote leaves, so I used fresh cilantro instead. These were amazing - the flavor almost reminded me of crab cakes.

Do we cook the potatoes first?

what  are these type of leaves? I  havent heard of them. Thanks!
