Rajmah Curry

What you need: 

1 can red kidney beans
1 red onion finely chopped
4 tablespoon tomato puree
2 tablespoon ginger garlic paste
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon chili powder
1/2 teaspoon minced green chilies
1 teaspoon cumin seeds
2 tablespoon vegetable oil
salt to taste
cilantro 2-3 tbsp
2 tablespoon vegan sour cream
garam masala 1 teaspoon (optional)

What you do: 

Heat oil in a saucepan. Add cumin seeds and fry till they start to change color. Add onions and sauté on high till they become light brown. Add ginger, garlic paste and 1-2 tbsp water. Cover and cook for 2 mins on medium flame. Add all the powders, 1 tbsp cilantro and tomato puree. Cover and cook for 3-4 mins on medium flame. Add enough water to get a nice sauce like consistency. Drain kidney beans from the can and wash thoroughly. Add along with salt and boil for about 10-15 mins. Mix in vegan sour cream and balance cilantro. Sprinkle garam masala and serve hot on a bed of basmati rice

SO HOW'D IT GO?

Yum, yum, yum!!  My variations:  I used a small can of green chiles, so I just threw in the whole can! instead of a 1/2 tsp.  Boy was that good, and I used the juice from that can vs. the 1-2 tbsp at the beginning.  I used a regular white onion b/c I wanted to save the red one for my fresh green salad.  Tremendously yummy!

Loved it! Subbed black beans for kidney beans and veggie stock for water and added some spinach, really impressed!

WOW. I have tried so many different Indian dishes on this site, and this one is the closest I have EVER come to that amazing authentic Indian restaurant flavor that I adore.

I almost didn't buy the Tofutti sour cream (didn't want to fork out the $), but it was worth it! Now what to do with the rest of the jar...

I substituted the various spice powders for two teaspoons of red curry powder and forgot to put the chilies in, but it was still yummilicious. Definitely recommended.

What a delicious and filling meal!  I love the spices and creaminess.  Definitely the best recipe I've tried from VegWeb so far.
