Raisin Bran Muffins
3 cups vegan raisin bran cereal
1 1/2 cups flour
1/2 cup whole flax seed
1 tablespoon baking powder
1 teaspoon baking soda
1/2 cup dry sweetener (best with brown sugar)
1/2 teaspoon cinnamon
1/8 teaspoon ground cloves
1.5 cups soy milk
1/3 cup oil
1 teaspoon vanilla
optional: other fruits and nuts (ex. 1/2 cup dried cranberries)
This is a vegan version of the six week muffins recipe that my mom made for me when I was growing up.
Preheat oven to 375, oil (with spray, easier) your muffin tins. in a large bowl, mix dry ingredients. (Sift the flour if so desired, some people are all about sifting, I couldnt care one way or the other.)
Once lightly mixed, add wet ingredients, continue to lightly mix, smooshing the bran flakes, until its at your desired consistency. Feel free to add more bran flakes or more soy milk if its a little too wet or dry.
Evenly pour into tins, cook for 20-25 minutes. I would check at 15.
