Quick & Easy Homemade Gluten

What you need: 

1 cup gluten flour
1 cup water
vegetable broth, as needed

What you do: 

1. Stir gluten flour and water together, adding more water if necessary. You want a nice thick dough.
2. Knead to get the gluten elastic and squeeze out the excess water. (I do this right in the bowl I mixed it in, or a colander would work to drain off the water.)
3. Break in small pieces and simmer in vegetable broth at least 1/2 hour. The longer you knead and simmer the gluten, the tougher it will become, so you can pick your own texture.
This recipe is a lot simpler than the old-fashioned way!

Based on the other recipes for Seitan on vegweb,the reason it was so wet is that it is meant to be fried to baked after the boiling stage. Give that a try and it should be a better consistency. Cheers!

I thought this was going to come out bland and was tempted to add spices, and I thought it was wayy too wet, but i resisted and it came out wonderful. I made it for fred chicken from this site, the only negative thing I could say is it held a lot of water after boiling. DELICIOUS

(Oh, I also added a little no-chicken bouillon to the water I added to the gluten, as well as to the water I used to boil it.)
