Quick and Easy Peanut Butter Chocolate Pudding
1 box mori-nu extra firm silken tofu
7/8 tablespoon granulated sugar or other dry sweetener of choice
4 tablespoons cocoa powder ( baking kind )
2 tablespoons smooth peanut butter
1-4 tablespoons water, just enough so it will blend.
Combine all ingredients in a blender or food processor.
(Do not drain Tofu! It adds moisture as well as the extra water)
Blend together until thick and put into bowl and into the fridge until cold.
This would also work well as a pie filling, but I couldn't resist it.
Could also blend in raspberry preserves, banana's, anything you can think of if you have a peanut allergy.
