Peanut Butter Pizzas

What you need: 

Homemade, pre-cooked mini pizzas (recipe below)
3 tablespoons peanut butter (or your favorite nut butter)
1 carrot, raisins, raw sunflower seeds (etc.)
For whole grain pizza dough:
yeast
2 tablespoons sugar
1 cup warm water (110 degrees F)
1 tablespoon olive oil
1 teaspoon salt
3/4 cup all purpose flour
3/4 cup whole wheat flour
1/4 flax seed meal (or barley flour, or rye flour)
1/4 cup cornmeal
1/4 cup oatmeal

What you do: 

I make a recipe for pizza dough in my Vitamix (adding things like flax seed meal to "hide" it from my 2 year old).
Combine the water, yeast and sugar. Allow to proof for 5 minutes (bubbles form on top)
Combine the dry ingredients and blend in blender or food processor (breaks up the oats etc. (If you have a Vitamix with a 'dry container' you can just continue and mix and knead the dough in the machine.)
Mix in yeast mixture and olive oil. Turn out on a floured surface, lightly flour top and knead.
Quarter the dough, cover and allow to rest for 15 minutes. Punch down dough and roll out 4 mini pizzas (approx. 6 inches each).
Place on a baking sheet sprayed with cooking spray. Prick with fork everywhere but not the outer crust. Bake at 425 for 10 minutes or until done.
Slice carrots very thinly (so that they resemble pepperoni).
Put peanut butter on 1 pizza, I like to do it while the pizza is hot so it melts. Place carrots on pizza sprinkle with raisins and sunflower seeds.
I allow the other 3 mini pizzas to cool and freeze for later.
Other toppings:[br] *Spoonfuls of Jam on the PB (also looks like pepperoni)[br] *Any kind of seed[br] *Shredded carrots or cucumbers[br] *Chocolate or carob chips, as a treat[br] *Anything you can think of...

I would have never thought of bananas and honey!
I forgot to mention that if you don't want to make the dough from scratch you can always top a warmed pita with toppings. Then just slice it like a "pizza"  :)
