Peanut Butter Pancakes

What you need: 

1-1/4 cups all-purpose flour
2-1/2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup nondairy milk
1/3 cup water
1/4 cup peanut butter
1 egg equivalent, prepared (I use EnerG Egg Replacer)
1/2 teaspoon vanilla extract

What you do: 

1. In a bowl, combine flour, sugar, baking powder and salt.
2. In a separate bowl combine nondairy milk, water, peanut butter, egg replacer, and vanilla extract; beat until smooth.
3. Pour wet ingredients into dry and mix well.
4. Grease a hot griddle. Pour 3 to 4 tablespoons worth of batter onto griddle; cook for 1 minute or until golden on griddle side. Flip over and cook for another minute or until golden on both sides.
5. Top with favorite syrup, fresh fruit or jam.

SO HOW'D IT GO?

Delicious! I halved the recipe, and added chocolate chips. The pancakes came out perfectly!

i made these and they are SOO good! i added dark semi-sweet chocolate chips, and it made it an even sweeter pancake! it was almost as if i was having desert for breakfast! very good recipe, thank you so much for sharing!  :D  :)>>> ;)b

These are so good!! Thank you for this delcious recipe.

I didn't have ener-g egg replacer so I used a ripe banana in place, it was amazing.

A great hearty and delicious breakfast! i used 1/4 c. applesauce as an egg replacer. these are goin in my recipe box, yummmmmmmm :)

These were AWESOME. The smell is amazing, and had all of my co-workers drooling during my lunch. Such a good twist to regular or fruit pancakes, and I'm sure it would go great with any type of syrup. Pancakes are one of my favorite food groups, so my only complaint about this recipe is that my wife likes them as much as I do for once - which means I don't get as many.  :(

Double batch it is next time around!

P.S. I used whole wheat flour as usual, and only half the sugar. Other than that, I followed it exactly with my electric griddle.

Very interested in this (WHAT a gorgeous photo!). Now, do you reckon this would work with whole wheat flour? Or, perhaps half 'n' half?
