"The One" Banana Bread

What you need: 

1 small banana, sliced
1/4 cup rolled oats
1/4 cup large coconut flakes
1/4 cup brown sugar
1/4 coarsely ground almonds (optional)
2 tablespoon ground flax seeds
2 cups flour (1 light spelt, 1 whole wheat)
1 teaspoon cinnamon, ground
2 teaspoon baking powder
1/4 teaspoon fine sea salt
1/2 cup maple syrup
2 ripe medium bananas, mashed
1 tablespoon lemon juice + approx 1 cup soymilk
2 tablespoon canola oil

What you do: 

Preheat oven to 375F.
For topping: In small bowl, combine sliced banana, oats, coconut, brown sugar & almonds (if desired). Set aside.
For Bread: In medium bowl, combine maple syrup, flax seeds, oil & soy milk-lemon juice mixture (note: add 1 tablespoon lemon juice to measuring cup, then fill to 1 cup with soy milk) until thoroughly emulsified. Stir in bananas. Set aside.
In large bowl, mix together flours, cinnamon, baking powder & sea salt. Make a well in the centre.
Pour wet ingredients into dry, stirring until just combined.
Pour batter into lightly oiled and floured loaf pan. Bake at 375F for at least 50mins, or until a knife inserted into the centre of the loaf comes out clean.
Allow the loaf to cool before removing it from the pan.

I am just making this now. Smells good. I assume you put the topping on before you bake it?
