Oatmeal Breakfast Bars

What you need: 

2 2/3 cups oats
1/3 cup flax seed meal
1/2 cup dried fruit
2/3 cup chopped nuts (I use pecans)
1/2 tablespoons cinnamon
2 medium bananas, mashed
1 liquid egg replacer (I use Ener G)
1/3 cup canola oil
1-2 tablespoons agave nectar

What you do: 

1. Preheat oven to 350 degrees F. Grease a cookie sheet. Combine all the dry ingredients and mix well.
2. Add mashed bananas, prepared egg replacer, oil and sweetener and mix well until blended and mixture is sticky. Add water, as needed for a sticky consistency.
3. Shape dough into bars on prepared cookie sheet, making the bars about 1/3" thick. I would definitely recommend shaping all the bars at one time, because the longer the dough sits, the stickier it gets.
4. Bake for 15 minutes.
I make these for my husband in lieu of buying him store bought breakfast bars. They are healthier and cheaper.

SO HOW'D IT GO?

These are great. Really easy to make. Im not Vegan so I used an egg and honey for the sweetener . I also left out the oil completley. I added chocolate chips and some coconut I had left over in my cabnet. I think I may try melting some peanut butter and using that next time too.

i made these monday night and by tuesday night they were gone. i added chunks of apples and a lot of cinnamon. we used chopped dates and dried cranberries. they seemed like they needed to be kept in the fridge based on the consistency, and when eaten later they were better heated up for about 35 seconds. we really enjoyed them and they're going to keep getting made at our house. this is a great and easy recipe, thanks for posting! ;D

...and as usual I've forgotten some insignificant detail or other.  I pressed these into a pan and cut them into 15 bars.  Not that it matters.

This is so great!  I eat oatmeal most days for breakfast and lately I've been running late and having to scarf it down.  This is a much better idea  ::)

This recipe is also very versatile and forgiving!  I made these with wheat bran instead of flax, flax eggs, applesauce for oil, cranberries, slivered almonds, and no sweetener.  Of course they taste healthy, but that's one of the best parts.  I also baked them for a lot longer because my oven is a little wonky.  Next time (and yes, there will be one!) I'll make them with sesame seeds and apricots.  Yum!

these are great! i made a batch last night- used about 1 1/2 cups of muesli and the rest of the 2 2/3 cups of oats. I had maple syrup for the sweetener and used sultanas and dried pineapple for the fruit and walnuts and sunflower seeds. I really like being able to taste the banana even though i only had one plus a tbs apple sauce. Oh and i used wheat germ instead of flax meal as someone suggested. Mine were quite moist though, maybe they just needed cooking longer, but i still like them and will be making them again. I cant wait to get some dried apricots and apple, cranberries would be nice too.

YUM! These are a great, natural alternative to the whey containing granola bars I usually eat.  The only modifications I made were whole wheat flour in place of the flax seed meal (didn't have that ingredient), and the addition of some vegan chocolate chips.

Has anyone ever tried these with fresh fruit?  I generally make a batch of something on Sunday that I can grab and run with throughout the week.  I have some blackberries I want to try.

I haven't, but I think if you use fresh fruit that is juicy (as berries tend to be), I would err on the side of caution and prepare the filling like you would for a pie: cornstarch.

I have made these several times now and just love them.  The last couple of times I have made them I scooped them into a muffin tin and this works great. I get 12 perfect little 'bars' withless effort and mess. I just use a 1/4 cup scoop and press them firmly into a sprayed tin. I cook them for about 25 min in a 225degree oven.

These are wonderful! They do get a little soft after a while but not a big issue. I baked, then cut like others did and that worked well. I baked mine in my toaster oven in the baking/broiling pan that came with it since I didn't want to turn on my big oven on a hot summer day and it worked perfect. I turned the temp down to 325 though.
I put dried cranberries in mine, along with almonds and pecans and maple syrup as sweetener.  I'll probably try different variations next time since I'll definitely be making them again. I thought about adding some rice krispies but I'm afraid the sogginess will be detrimental.
