Nice Carrot Cake

What you need: 

1 1/2 cups white flour
1 1/2 cups whole meal flour
2 teaspoons baking powder
1 teaspoon baking soda
3 cups of shredded carrot
1 shredded apple
1 cup of yellow raisins
1/2 cup of cut walnuts
1/2 cup cut almonds
1/2 cup linseed water (boil 3 tablespoons and strain)
1 1/2 cups soy milk
2 cups brown sugar
1 teaspoon sea salt
3 teaspoons vanilla
1 tablespoon shredded ginger
1 1/2 teaspoons cinnamon
1 1/2 teaspoon ground allspice
1 1/2 teaspoon ground clove
1/2 teaspoon ground cardamom
2 tablespoons egg substitute

What you do: 

Put soymilk, linseed water, carrot, apple, vanilla & spices to simmer for about 5 minutes. Add sugar and salt and simmer for 2 minutes more. Turn off and leave to cool.
Sift flours, add baking powder and soda into a large bowl.
Cut walnuts and almonds and prepare egg replacer.
Add the carrot and liquid to the flour and mix evenly. Add oil, egg replacer, nuts and raisins and then pour into a large oiled and floured tin.
This cake cooks in about 1 1/2 hours in my slow, gas oven (on high)!! So you'll have to experiment...try 250 degrees for an hour or so...Good luck! A very moist and fragrant cake...
