Mushroom Soup with Wild Rice

What you need: 

1/2 cup wild rice
2 Tablespoons olive oil
3 garlic cloves, minced
1 medium onion, diced
3 Tablespoons dry thyme
1 teaspoon oregano
1 lb mixed mushrooms, sliced
6 cups broth
salt and pepper, to taste

What you do: 

Cook rice and set aside.
Heat oil over medium flame, then add garlic, onion, thyme, and oregano. Saute for about two minutes. Add mushrooms. Saute until mushrooms begin to soften and onion turns clear.
Stir in broth and bring the soup to a boil. Reduce to a simmer, cover, and cook for 20 minutes. Add rice, salt, and pepper, then simmer 10 minutes more.
Note: other spices may be used in addition or as substitutes, depending upon personal preferences. Rosemary, sage, dill, and paprika all do nicely in this soup.
