Moose's Macaroni and "Cheese"

What you need: 

1 lb package of macaroni, farfalle, or fusilli (my favorite)
2 packages Follow Your Heart cheddar "cheese," shredded
1/4 - 1/2 cup nutritional yeast
1 - 1 1/4 cups unsweetened soy milk
Topping:
1 1/4 cup panko and/or crumbled crackers (great way to use stale crackers!)
4 cloves garlic, minced
10 large basil leaves, shredded into ribbons
about 1/4 cup olive oil
salt and pepper to taste

What you do: 

Follow the directions on the package of pasta.
As the water is coming to a boil, prepare the topping:
In a medium-sized bowl, combine all topping ingredients. Spread evenly on a small baking sheet and pop it in a toaster oven for about 10-15 minutes (keep an eye on it!) at 350 degrees Fahrenheit. If you don't have a toaster oven, a conventional oven will work fine.
Prepare the "cheese" sauce while the pasta is cooking:
Shred the Follow Your Heart into a medium-sized pot and stir until melted.
Add the nutritional yeast and stir.
Keep stirring and add the soy milk.
Make sure to keep stirring until the pasta is ready.
Drain the pasta and return to pot. Mix the "cheese" in with the pasta.
Serve immediately and top with the crumb topping.
If allowed to cool, the "cheese" will congeal a bit, so it's best to eat it right away!
