Moist Non-Fat Banana Bread

What you need: 

1 1/2 cups flour
3/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 teaspoon maple syrup
2 egg whites (I use 2 Ener-G egg substitute eggs)
3 ripe bananas, mashed well
1/4 cup unsweetened applesauce

What you do: 

Preheat oven to 350F. Mix dry ingredients, then add maple syrup, eggs, applesauce, and bananas. Pour into greased baking pan and bake 50-55 minutes, or until a toothpick comes out clean. Turn out onto rack, let cool 10 minutes.
Note: this vegan bread is fairly dense and moist. Be sure to test it with a toothpick before deciding its done, or the bottom might be overly wet and chewy.
