Italian Bread Salad

What you need: 

1 loaf artesian bread that is a touch stale
1 clove garlic minced
1 cup chopped tomatoes
1 cup cucumber - peeled, seeded and chopped
1 cup chopped red onion
1 cup fresh chopped Italian parsley
olive oil
balsamic vinegar

What you do: 

Pull apart or chop vegan bread into bite size pieces.
In a large bowl, combine vegan bread, tomatoes, cucumbers, red onions. garlic and parsley. Add enough olive oil and vinegar to lightly coat, toss and serve
If vegan bread is too fresh, toast it until it is about half as dried and crunchy as a crouton.
