2 tablespoons oil
1 green plantain, chopped
10 pieces vegan bacon, chopped
1 cup peas
6 corn tortillas
1/2 cup refried beans
6 slices vegan melting cheddar cheese
1. Preheat oven to 350 degrees F. Add oil to pan to heat, then pan fry the plantain.
2. When done, dump out left over oil and add the peas and vegan bacon to the plantain. Heat for about 3 minutes.
3. Take the tortillas, and spread refried beans over them, then place vegan cheese over the beans. Put the plantain mix over the cheese.
4. Put them in oven for about 5 minutes. You want the cheese to melt and the tortillas to get crispy. Take them out of the oven and enjoy.
