Hella Veggies Pesto Pizza

What you need: 

1 premade vegan pizza crust (I love Vicolo or Trader Joes)
1 - 8 ounce jar sun dried tomatoes in oil
1/2 cup walnuts
2 cloves garlic
4 cups spinach
1 cup sliced mushrooms
1/2 red pepper
1 small zucchini, thinly sliced
2 tomatoes, sliced
1/2 red onion, chopped
Olive oil
1 tablespoon Italian Seasoning
Salt and pepper

What you do: 

1. Turn the oven on to temperature suggested for cooking pizza crust. To make pesto, put sun dried tomatoes with oil, walnuts, and garlic in a food processor and combine. Season with salt and pepper to taste.
2. Spread a generous layer of pesto on the pizza crust. Top with spinach, mushrooms, red pepper, zucchini, tomatoes, and red onion. The pizza will be overflowing with vegetables but do your best to keep it on the crust, it will shrink in the oven. Drizzle the top of pizza with desired amount of olive oil, sprinkle with Italian seasoning and salt and pepper to taste.
3. Cook pizza according to pizza crust directions and enjoy!
