Healthier Hamburger Helper

What you need: 

1 pound elbow macaroni, cooked and drained
1 package burger-style crumbles (Smart Ground brand recommended)
1 can tomato sauce
1/2 cup soy milk
1/2 cup vegan cheddar shreds
1 teaspoon cumin
1 tablespoon chili powder
dash of hot sauce
green onions for garnish

What you do: 

Cook the macaroni, drain and set aside.
In a saute pan over medium heat, mix together veggie burger crumbles, tomato sauce, hot sauce and spices. Add soy milk and veggie shreds, stirring until smooth.
Mix in macaroni, add a little salt and pepper, top with a handful of chopped green onions, cook until just thickened.

Mmmmmmmmmm this was awesome!!
I seriously couldn't believe it was vegan. I also used some nutritional yeast. I cut the whole recipe in half 'cause it makes a ton. I must not eat as much as other people because I got 4 servings after I cut everything in half lol But yes it was delicious!

I also saute green, red, yellow, and red pepper, onion, and garlic before I add the meat.

I have been making this for about a year now and the children just love it.  I always add double the cheese to make it cheesier, I also add nutritional yeast(which makes it requires more milk) but gives it an authentic taste. try it you'll like it!!!
