Ghana Bhajee

What you need: 

large Spanish onion
2 cans chickpeas (Put 1/2 Cup Liquid Aside For Later Use)
whole tomato or 1/2 cup canned tomomatos
1/2 teaspoon lemon juice
3 cloves garlic (press)
2 tablespoon finely chopped ginger
2 tablespoon coriander
1/4 tspn cayenne
1/4 tspn black Pepper

What you do: 

Brown Onions in water (Can be done in very small amnt of oil also) Add ginger and garlic Cook 2 min. Add all spices except salt Cook 1 min. Add tomatoes Cook 5 Mins Add the liquid from the chick peas Add 1/2 cup water and lemon juice Cook 10 mins Add chick peas Cook 10 mins Add salt to taste.
This becomes a kind of paste and can be eaten as is. A friend of mine usually makes some for work and we spread it on a type of Mediterranean Bread we get here in NYC that is fat-free. It is called Shepards Bread made by Damascus Bakeries. It is very flat and thin and the Ghana Bhajee can be used as a filler
