Garbanzo Bean Salad

What you need: 

3/4 cup cooked garbanzo beans, drained
1 celery stalk, cut into 1/4" dice
1 Roma tomato, cored and de-seeded, cut into 1/2" dice
1-1/2 tablespoons flax oil, or to taste
balsamic vinegar, to taste
salt, to taste

What you do: 

1. In a bowl, place the beans, celery, and tomato.
2. Drizzle with flax oil, vinegar, and salt.
3. Toss well to distribute the dressing. Serve.
Source of recipe: I invented this recipe to fulfill a craving for tuna salad. This combination of oils and acids is vaguely reminiscent of tuna, to my palate.
