Ennui Chili

What you need: 

2 cups yellow onion, diced
4 teaspoons crushed garlic
olive oil, as needed
1 (15 ounce) can tomato sauce
1 (28 ounce) can diced tomatoes
3 cups cooked garbanzo beans
2 cups kidney beans
1 cup white hominy
2 cups sweet yellow corn
1 cup green beans
2 teaspoons cumin
1-2 tablespoons maple syrup
6 tablespoons Dragonfly's uncheese dry mix (http://vegweb.com/index.php?topic=7126.0) or nutritional yeast
1 tablespoon oregano
1/2 teaspoon chili powder
1/4 teaspoon cayenne
1/2 tablespoon salt
1/2 tablespoon lemon pepper
1 (12 ounce) package vegan meatballs, optional
1-2 jalapenos, seeded and chopped, optional

What you do: 

1. Saute the onions and garlic in a little olive oil until just browned.
2. Add everything to the crock pot and cook on low for about 6-8 hours stirring occasionally, if possible.
Serve with cornbread.
Source of recipe: I made this up because I was bored with my usual chili recipes, hence the title.

SO HOW'D IT GO?

This was pretty tasty. The hominy is nice, it kind of blends all the flavors together. I added half a tube of soyrizo instead of the "meatballs" which gave it the right amount of kick. I had to leave out the green beans and 1 cup of the chickpeas, I just didn't have enough room in my Crockpot! I took this over my family's over the holidays (good thing too, there was nothing else I could eat :P ) and everyone that tried it really liked it.

Yum Yum Yum!!!  I think I like this better than my old-standby chili recipe.  I halved the recipe since I was just making it for myself.  I omitted the green beans and used mushrooms instead of the meatballs.  Wonderful!  Next time I will have to remember to throw in some ground flax seed.  Thanks for the great recipe!

I made this tonight and it was super good!! :D Also made cornbread to go with it  :P

At Yabbitgirl's suggestion I have started replacing the optional meatballs (which I never liked that much anyway) with sliced white mushrooms.  Really good!

I always add a few mushrooms...goood chilli. 8)

I usually also add about 2 TBSP ground flax seeds to this to add some omega 3's.
