SO HOW'D IT GO?

SmileThis was really good!! I didn't use cheese, I used marinara sauce for dipping. I also used italian seasoning while cooking.  Great sandwich, quick and easy and delicious!!

I made this for lunch last weekend. I love eggplant so this recipe was right up my alley. I however sliced the eggplant thinner and then I used the left over eggplant in a eggplant "parmesan" (I used nutritional yeast flakes instead of cheese) This was great and tasty as well. Thanks for the inspiration!
