Easy Refrigerator Curry

What you need: 

2 tablespoons oil
1 potato
1/2 onion
curry powder to taste
garlic or garlic powder
condensed tomato soup
assorted veggies (leftovers)

What you do: 

Fry the onion, garlic (if using garlic powder wait for that), potato (chopped up into small pieces) and celery (could leave out &/or use carrots) until just tender. Season with curry powder, garlic powder (if not using fresh garlic), pepper and salt. Add a little bit of this and that with cooked chopped veggies, and leftovers, hence the "refrigerator" part. I used broccoli and asparagus the last time. Now, this is the way easy part that i just tried out, add about a 1/2 can of condensed tomato soup and stir gently. Add some hot water until it looks saucy and a little soy sauce. Cover and let simmer on low heat. A few minutes is fine. Serve over rice. Sooo easy. Tomato soup--who knew?

SO HOW'D IT GO?

I like this dish. It was a good way to use up the mish-mosh of veggies in my fridge. I added tofu, and ended up needing the whole can of tomato soup. I went sparingly on the curry since I'm almost out of it, but next time I'll probably add a lot more.
