Easy Cream Cheese Roll-Ups

What you need: 

1 large tortilla (I like to use the Trader Joes spinach flavored, but plain is also good!)
1/2 (8 ounce) container vegan cream cheese (I use plain Tofutti)
1/2 (4 ounce) can black olives, drained and diced finely
1 jalapeno, diced finely

What you do: 

1. Spread the tortilla on a flat surface, and spread cream cheese over the tortilla.
2. Sprinkle olives evenly over the cream cheese tortilla.
3. Sprinkle jalapeno over the cream cheese tortilla.
4. Roll up the tortilla and cut into 1" pieces. If you'd like you can puncture each piece with a toothpick to keep them together and make consuming them easy for guests. If not serving right away, these can certainly be chilled! Enjoy!

SO HOW'D IT GO?

I'm a horrible cook...going to try making this for my first potluck as a Vegan. Do you think Kalamata olives instead of black olives would be good?

I'm thinking I'll slice the open tortilla in the slices, fill and then wrap. ?? Or should I make one full tortilla with filling and then cut it into pieces?

I needed a finger food recipe for a party, and this one was a hit. It's a bit time-consuming, so get a helper. It's not difficult, so even your kids could help. I stuffed mine with all the suggested veggies, but I roasted the jalepeno and red pepper. It took longer to make, but it was worth it. Yumm! You can also try using roasted red pepper or garlic hummus inside. I'll definitely be making this recipe again.

This recipe is WONDERFUL! I made a few varieties of this for my company potluck today and it was a hit!!! Nothing left but crumbs! LOL

very easy and tasty, try browned the tortilla in a frying pan before slicing. Delicious
