Creamy Pesto Sauce

What you need: 

2 cups cooked soybeans
1 large bunch basil, washe'd and spun dry
juice of 2 lemons
zest of 1 lemon
5 large cloves garlic
6 tablespoon extra virgin olive oil
1/4 cup plain soy milk
salt/pepper to taste
*optional * several grates of fresh nutmeg

What you do: 

Place all of the above in a food processor or strong blender. I use a VitaMix. Process for several minutes until very creamy. This takes at least 2 minutes.
This is delicious as a creamy pesto for pasta, a mayo like spread for sandwiches, as a topping for soups or casseroles, or to add flavor to steamed veggies or in salad dressings. The possibilities are endless! Enjoy!

Fantastic recipe!  My mom is not a vegan and she was very surprised there was no cheese in this--it is very creamy!
