Cranberry Lime Muffin Delight

What you need: 

1/4 cup white flour
1 3/4 cup whole wheat flour
1/2 cup or more of dried cranberries
3-4 limes, juiced
1 to 1 1/2 of the lime rinds (grated)
2/3 cup sugar of choice
1 1/4 cup water
1/2 cup applesauce
3 tablespoons oil of choice
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons vanilla extract
2 teaspoons egg replacer mixed with 2 tablespoons water
spray for muffin tin

What you do: 

This was first a regular waffle recipe gone terribly wrong! I didn't like the consistency of the batter... so i had some extra limes and a dream... and am pleased to announce a delightful discovery! These are best warmed... and oh so heathy!
Preheat oven to 375 degrees F.
Grate 1 - 1 1/2 of the lime rinds and then cut the limes into quarters and juice generously! Mix all ingredients. The citrus will make it will sizzle a little.
Pour batter into a greased muffin tin, should be exactly enough for 12 muffins.

SO HOW'D IT GO?

Wow, this did not turn out like I expected it to. The batter was too light and airy, not like like a muffin batter at all. It would be much better for pancakes instead of muffins. They were also saltless, something I didn't catch before I stuck them in the oven. Overall, not impressed.
