Coconut Chia Pudding

What you need: 

1/4 cup chia seeds
1/8 cup hemp seeds
1/4 cup raisins
3/4 cup nondairy milk (I use almond)
1/4 cup shredded coconut
1/8 cup cacao nibs
1 banana, sliced (or other fruit)
1-2 teaspoons agave, optional

What you do: 

1. Combine chia seeds, hemp seeds, raisins, and milk in a bowl, and stir well to combine. Leave to sit for about 5 minutes to let the milk get absorbed.
2. Gradually fold in the coconut and cacao. Top with fresh fruit slices, drizzle with agave, and enjoy!
If you're worried about keeping it 100% raw, you can make your own raw "mylk."
Source of recipe: I wrote this recipe, but I was inspired by a coconut chia pudding that someone made at a potluck a few months back.

Variation: The other morning, I made this with no coconut and substituted a heaping spoonful of almond butter. I also doubled the hemp seeds for a protein boost and to emphasize the hearty, nutty flavour. Finally, I added extra bananas and mashed some of them into the pudding for a delicious, nutritious breakfast!
