Cocoa Applesauce Bread

What you need: 

Bread:
1 2/3 cups flour (can use 50-50 whole wheat)
1 cup sugar
1/3 cup cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups applesauce
2 egg substitutes (http://vegweb.com/index.php?topic=7678.0) Glaze:
1/2 cup powdered sugar
3-4 teaspoons nondairy milk

What you do: 

1. Preheat oven to 350 degrees F. For cake, combine the dry ingredients. Stir in the wet ingredients gently; do not over mix!
2. Bake for 50 minutes in a 9x5x3" bread pan. When it comes out, let it cool almost completely.
3. Mix together the glaze ingredients and brush it on top.
This vegan bread is delicious!

SO HOW'D IT GO?

The only replacements I made mine with were 4 pods of ground cardamon, in addition to the cinnamon. And  used 2/3 cup of honey, no sugar. And 3/4 cup Jowar flour, 1/2 cup rice flour, and 1/3 c arrowroot,  with a little gluten replacement, no eggs. I used half carob and half cocoa powder, and folded in some raisins soaked in boiling water. I ate some after 30 minutes in the oven, and it melted my coconut oil nicely. 10 more minutes and it was light and fluffy. Deliesh!  10 more minutes for the center' a little moist. It's all good.

this sounded so delish, i jus had to try it! changed the recipe up a lil tho... used 2/3 c. honey instead of sugar (i eat honey...), and didnt use any egg replacers (had enough liquid because of the honey). didnt have cinnamon either...... howeverrr, this was a surprise! only cooked for 30 minutes, started to smell amazing so thought i better check it, thank goodness. moist and not too sweet but just perfect with the glaze. thumbs uppp, thanks!

I am eating this right now, and am surprised that it is not completely cakey, like I thought it would be as I was making it. It's sort of a cross between cake and bread. Very fluffy, which is unusual for most of my baking. I will definitely be making this again!

This was great!! I think this definetly qualifies as a dessert. I used the 1 1/2 cups of applesauce and only 1/3 cup sugar/splenda mix.  Definetly try! ;)b

this was good, i went with the 1 and a half cups of applesauce, 2 flax eggs, cut the sugar to 2/3cup, and did half cocoa/half ghiridelli ground chocolate.  i also added about a cup of sunflower seeds, and i think chocolate chips would be awesome of course, too.  i totally forgot about the glaze.. but it was still good without it.  i got 3 mini loaves out of it and i baked them for about 40-45 minutes.

I love this bread! It's wonderful! I make it every few days, sometimes modifying the recipe by adding a handful of pecans (and a splash of soymilk to thin up the batter a little). My whole family loves it hot out of the oven... and they thought I was crazy for going veg.  :P
