Chocolate Peanut Butter Soymilk Shake

What you need: 

2 ice cube trays of frozen soymilk 

1 cup sugar

1/2 cup chocolate chips

1/3 cup peanut butter

extra soymilk to desired consistency

(Optional) 1/3 cup unsweetened coconut 

What you do: 

Freeze soymilk in 2 ice cube trays for several hours. To thaw, run the trays upside down under hot water 5 or 6 times. Twist the trays from side to side and the cubes will easily fall out. Dump ice cubes into food processor and pulse until cut up. This takes some practice and depends on your processor. Sometimes, they blend right up for me and sometimes I have to stab them a few times with a butter knife to make it easier for them to blend.

Add the peanut butter, chocolate chips, sugar and a little bit of soymilk. Continue blending and then slowly add more soymilk until it's the consistency you like. I like mine almost pourable.

This recipe is SO customizable to your tastes. Use any dairy free milk, eliminate the peanut butter and add strawberries and unsweetened coconut for a completely different shake. For a sugar free shake, I eliminate the peanut butter, add fruits including pineapple (for sweetness) and use orange juice instead of the additional soymilk.

This makes 3 large glasses.
