Chickpea & Textured Vegetable Protein Curry with Coconut Rice

What you need: 

2 tablespoons vegetable oil, soy sauce to taste
1/4 onion, chopped; 1 tablespoon fresh ginger; 3 kaffir lime leaves (if you have them)
1 garlic clove, chopped; 1 stalk lemongrass, chopped (if you have it)
2 Thai chili peppers, chopped (if you like it spicy)
2 tablespoons Thai curry paste (red or green)
1/2 teaspoon coriander
1-1/2 cup cooked chickpeas
1 cup dried textured vegetable protein (reconstitute in veggie broth or water)
1 14-oz can diced tomatoes + 4 oz. tomato paste if you want more tomato flavor
1/2 cup sliced mushrooms, any other veggies you want to throw in (zucchini, eggplant, etc)
soy sauce to taste
1/4 cup sesame seeds, toasted (optional)
1 cup jasmine rice, uncooked
1 14oz can coconut milk

What you do: 

Saute onions, garlic, ginger, and lemongrass in vegetable oil until onions are translucent. Add in the thai peppers and let those fry a little. Throw in the curry paste and coriander and stir until fragrant. Add everything else but sesame seeds and simmer for about 5-10 minutes. Throw in the sesames at the very end, and give the curry a good stir. To make the coconut rice, you just want to replace 3/4 of each cup of water you would normally use with coconut milk. So for one cup of rice, you need 1/2 cup water and 1-1/2 cups coconut milk. Bring this to a boil with a pinch of salt and then add the rice, cooking until the liquid is absorbed. (Note - don't worry if the coconut milk has separated; it does that in cooler temperatures and will be back to normal by the time it boils.) Serve.

SO HOW'D IT GO?

I liked this alot. TVP kinda creeps me out (it falls into the not-a-real-food category for me), so I added kidney beans instead. Otherwise I followed the recipe, adding cauliflower as my throw-in vegetable. Very flavorful and easy to make. The coconut rice was a nice pairing. Will definitely make again.

hehehe, I just had to add this... my meat loving boyfriend is working on his second helping of this... he wants to take the leftovers to work with him, and wants me to make more so he can have it for breakfast.  When I asked what number I should rank it, he was very disappointed when I told him it only goes up to five.

Yummy stuff!!  Only one complaint, the recipe is a little confusing... it says to put all remaining ingredients together, then goes into the coconut rice as a separate thing. A little confusing. I cooked them separately, and used red curry and added zucchini and cauliflower.  I didn't have the lime leaves or lemongrass (but they were in the curry paste I used).  I used the liquid from the can of tomatoes as well, the tvp sucked up most of the liquid when I added it.  For the rice, I made i cup dry according to the recipe but there was a lot of coconut flavor, so I mixed in about 2 cups of cooked rice from the night before and it was perfect!

Even my omni boyfriend is impressed, and told me I can make this as often as I like for him! I would take a picture, but my camera is kinda crappy and the lighting sucks... next time though.
I can't believe no one else has reviewed this... If you haven't made it yet, do it!!!  A little unhealthy with the coconut milk, yes but we can't be health nuts all the time.
