Cheddar Broccoli Soup

What you need: 

2 cups water
1/2 cup nutritional yeast
1/2 cup flour
2 teaspoons salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 1/2 tablespoons vegan butter
1/2 cup nondairy milk, add more if too thick
1/2 head broccoli, steamed and cut

What you do: 

1. Add all ingredients except the steamed broccoli together in a medium pot.
2. Heat until thick, and slightly boiling.
3. Add broccoli, and season to your liking.

SO HOW'D IT GO?

I just cooked this soup up. It looks delicious, and I think it tastes pretty good. My husband will let me know tomorrow how well it turned out.

I can't have soy, so I made cashew milk (1/4 cup cashews to 1 cup of water, blended for 2-3 minutes). I also can't have wheat, so I used ground rice flour (meaning I ground the rice in a coffee grinder). It's rather course as flour goes, but it's gluten free that way. White rice flour might have been better tasting, but I only have brown rice. It thickens, anyhow, just like the cereal I often cook from that ground rice flour, and the yeast flakes cover up the taste pretty much. I also added in some cauliflower, because I needed to use it up. Can't wait to try it!

Delicious! I changed mine up a bit because I was serving a lot of people... I started with a base of onions, garlic and mushrooms sauteed at the bottom of the soup pan, and then added Tofutti sour cream and a smidge of Tofutti cream cheese to give it more of a cheesey taste! Delicious! (and very easy...!)

This soup made my night, as silly as that sounds: it was by far one the fastest and most delicious meals I've made in a while. I doubled it, because I had a lot of broccoli, and I added one cubed, steamed russet potato - very good addition, but I imagine you could also add cooked rice, diced carrots, whatever you want. I also used extra onion powder and a liberal amount of garlic-and-herb seasoning (in addition to the garlic powder) and freshly ground pepper. I added veg bouillon to my water. I was able to halve the amount of salt and margarine with good results - I'd suggest starting with half the amount called for and then adding little by little. Definitely needs more soymilk, and it will still be nice and thick. Mmm...so simple, yet so good. Thank you!!

This was quick to make.  I added a lot more garlic/onion powder and about 1 cup of soy milk plus a little cornstarch for thickening.  The soup came out thick and cheesy!
