Cheddar Broccoli Soup
What you need:
2 cups water
1/2 cup nutritional yeast
1/2 cup flour
2 teaspoons salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 1/2 tablespoons vegan butter
1/2 cup nondairy milk, add more if too thick
1/2 head broccoli, steamed and cut
What you do:
1. Add all ingredients except the steamed broccoli together in a medium pot.
2. Heat until thick, and slightly boiling.
3. Add broccoli, and season to your liking.

This soup is great and SO easy!! I too added a potato. I put about 1/2 the broccoli and 1/2 the cooked potato and then blended it all up with the immersion blender. Once that was done I added the other half of the broccoli and potato. The only complaint I have is that it was a bit too salty. I'll probably cut the salt in 1/2 next time I make it.
I didn't even have all the ingredients for this, really need to go grocery shopping, but it still came out fine. I added in some green beans, peas and carrots along with the broccoli. I replaced the water with vegetable broth and for the thickening agent I used soy and whole wheat pastry flour. Quick and easy soup to make:)
Yum, this worked so well! My boyfriend was sick and I wanted to make him soup, but as a vegetarian (not vegan) he is very skeptical about nutritional yeast subbing for cheese. But this actually tasted perfectly cheesey and the nutritional yeast flavor was definitely NOT overwhelming at all!
Like many other commenters, I used vegetable broth instead of water. I also added potato and can't imagine making it again without the potato, because it was the best part of the soup.
Recommendation for potato: peel, cube, and add to boiling water in a separate pot (at higher heat) before mixing the other ingredients in the other pot. Then add the potato at the same time you add the broccoli (hopefully by this point the potato is cooked to the point where it is slightly mushy if you try to crush it, but not falling apart otherwise).

Yum! I've made this many times and love it! It's really helping me get over my old addiction to Panera's version of this soup that is made with chicken broth. Tonight I was craving it again, but didn't have all of the ingredients, so I came up with my own twist on it that I thought I would share cuz it's good too.
I added potato, used more water + vegan bullion instead of vegan milk, and made only a half batch.
Here's my recipe:
2 cups water
1 tsp "Better Than Bullion" vegan chicken broth substitute
1/4 cup flour
1/3 cup nutritional yeast
1/4 tsp garlic powder
1/4 tsp onion powder
1 1/4 tbsp vegan butter
1/4 head broccoli
2 potatoes - peeled, cubed, and boiled.
Throw it all* in the blender and enjoy!
*I blended in only half of the potatoes (makes it a nice consistency) and then put the other half in after it had been blended since I like a little chunkiness in my soups :)
I can't believe how simple and delicious this was. I was skeptical, but wow, even my omni hubby loved it and he claims to dislike yeast and broccoli so go figure.
This was awesome, will definitely make this again! I had a bunch of broccoli to use up and this recipe was perfect because I had all the ingredients in the cabinets! Yum :)
yummers. next time i might do less nooch and try adding some daiya cheddar for the hubby, since broccoli cheddar is his fav. i liked it the original way, but i think the nooch is a little strong and while i don't mind it, i can see it being an issue for him. maybe my nooch is old. haha. anyway, thanks for the recipe!
Simple and good! :-) ... of course I tinkered a bit, 'cause I can't help it: added tobasco & a few drops of smoke flavoring, a little more Earth balance, a little more garlic, a little less salt... and used frozen broccoli/ homemade chickenish broth instead of nondairy milk, since that's what I had... but I like how it turned out-- thanks for the recipe!
I was so surprised at how similar this tastes to real cheddar broccoli soup. It was delicious!!! Thank you so much for this recipe :-)

This recipe was awesome! Super simple! Super tasty! I used veggie broth instead of water, and I think that gave it a great flavor. The soup thickened easily and quickly. I used large chucks of broccoli, but next time I think I will chop it up much smaller.
