Cannellini and Yummy Onion Toasts
1 sweet onion (yellow)
1 can of cannellini beans
3-4 garlic pods
1/2 tablespoons rosemary
1-2 tablespoons basil
pepper to taste
dash of salt
2 slices whole grain bread
a few tablespoons of your fav pasta sauce.
a couple handfuls of spinach
Heat a large pan on medium high and spray a lot of cooking spray.
Then slice your onion into longish strips, and mince the garlic Pour the onion into the pan and stir and lower the heat to medium. allow it to cook for about 30-45 minutes, stirring every so often. add the garlic and rosemary in the last 15 minutes or so.
Drain and wash your beans really well, and mash with a fork. Add a lot of pepper and basil and salt.
Once your onions are really soft and browned, add the beans. Mix it together, and let the beans warm up.
Toast your bread, put on the spinach leaves and spread the mixture on top. add a little pasta sauce and more pepper and voila!
