California Couscous

What you need: 

1 medium onion, chopped
1 clove garlic, minced
1/2 cup vegetable broth
1 bell pepper
1 can black beans (drained)
1 can Mexican stewed tomatoes (drained)
1 teaspoon pepper
1 teaspoon cumin
1 teaspoon salt
crushed red pepper or cayenne pepper to taste
2 or 3 cups prepared couscous
olive oil

What you do: 

In large skillet, fry up the garlic and onion in olive oil until soft. Make sure the onions and garlic don't brown. Add bell pepper, tomatoes, spices and broth and bring just to a boil. Reduce heat to low or med-low and let simmer for 10-12 minutes (or until bell pepper is tender). Add beans and cook for another 5 minutes.
Prepare couscous normally (I used veggie broth in place of water).
To serve: Make a couscous mountain on a platter and pour mixture over the top. Let cool for a minute or two and enjoy!

SO HOW'D IT GO?

This is my staple couscous recipe. I make it with Israeli couscous (the bigger kind) and mix it all together instead of serving the veggies on top. I also cut the spices by about half. I like spicy food, but when I add the full amount, the spices overwhelm the dish and I don't enjoy it.

We really enjoyed this dish... we only changed it by adding collard greens.  Very Yummy- our kiddos are still a little reluctant with trying new foods... so they only ate half a plate full.  I will keep preparing it until it becomes standard for them.  :)

I served over whole wheat couscous, added a fair amount of cayenne to make it really spicy, and topped it off with avocado. Yum!!! Thanks for the recipe  :)>>>

this turned out great, I used red kidney beans instead of black, and diced tomatoes instead of stewed.  once te couscous was prepared I stirred it all together instead of making a mountain. Definately the best couscous recipe I've triied so far.

this was a good mix of vegetables - my dad and brother even liked it, and they usually eat chicken wings when i cook vegan meals

This was good, though I didn't have any veggie stock to make the couscous with, and I really wish I had.  The plain couscous made the whole dish a little bland.
