Blueberry & Corn Oatmeal

What you need: 

2 cups frozen blueberries
2 cups frozen corn
2/3 cups rolled oats
1/2 cup apple juice (optional)
1/2 cup water (optional)

What you do: 

1. In a bowl defrost the blueberries and corn. (They can be left overnight in the refrigerator, or I usually use the microwave.) This should result in a fair amount of liquid at the bottom of the bowl.
2. Add rolled oats and mix in. It is ready to eat.
3. If you would like it sweeter, incrementally add apple juice, tasting between each addition. Water may also be used if it is sweet enough but needs more moisture.
4. The oats are initially firm and chewy, until the liquid is absorbed. I like a soft grainy texture and eat it right away. If you like your oatmeal more mushy, let the mixture sit for a few minutes until more liquid is absorbed.
This recipe can be made with fresh blueberries and corn… but I have not tried it.
My five year old loves this, so it could be a quick meal for children as well.
