Banana Date Cake

What you need: 

36 dates
1 1/2 cups water or soymilk
1/4 - 1/2 sugar
2 cups flour
1/2 cup oil
2 teaspoons baking soda
3 bananas

What you do: 

This is a remake of a vegan date cake recipe I like.
1. Preheat oven to 350 degrees F and oil an 8x8 inch metal baking tin. (I use a deep cake tin with the oven on 150 - we have a very hot oven)
2. Put dates, soymilk/water, sugar and bananas in a blender or food processor and blend/process until dates are pureed (you can soak the dates in boiling water if they are hard) and ingredients are well combined.
3. Pour date mixture in a large bowl and add the oil. Stir well to incorporate. Add flour slowly. Then baking soda.
4. When you have incorporated all of the flour into the batter, pour into the baking pan and bake for 40-60 minutes (depends on your oven and tin, mine took an hour)until toothpick test comes out clean. (Cake will be very dense)

SO HOW'D IT GO?

I wish there was some way of giving this cake a rating between a 4 and a 5.  It is quite good as a base for trying out some cool taste experiments. 

I added some seasoning to mine, including: nutmeg, cinnamon, and vanilla, and I also added a pinch of salt. 

The dates give it a delectable consistency, and it hasn't even cooled yet!  Thanks for the recipe.
